19 Ground Venison Recipes | What to Make with Your Deer Meat (1)

Ah, ground venison recipes. If there’s one thing every hunter has after a harvest its ground venison, or “deer hamburger” as my husband would say. I’m curious, do you call ground meat “ground (whatever meat it is)” or “hamburger”?Anyway.

So, you have a bunch of ground deer meat (or elk, antelope, moose) on hand. And I’m here to give you some inspiration for what to do with it! The same old recipes your grandmother made can feel tired and dowdy and I know I even need to check this list to refresh my meal rotation. And as much as well all lovevenison stew, fresh ideas are always needed! This a list of my tried and true (and healthy) ground venison recipe dish ideas and resources!

But what about the gamey taste? How do you get the gamey taste out of ground venison?

The thing I want you to know is that if you follow any of these recipes, you won’t have any of that “gamey” flavor some people complain about. Yes, venison tastes differently than beef. And especially if the meat your eating is from a large, trophy buck in rut, the meat will have a stronger flavor if you’re used to commercially purchased meats. But, if you prepare venison correctly it is delicious.

How do you make venison ground meat taste good?

The thing to do with venison is to prepare it properly. That means proper seasoning, adding some sort of acidic component AND if you’re making a burger, don’t cook it so that resembles a hockey puck. Stick to the recipes and you’ll learn a few tips and tricks that will have you clearing out that freezer in NO time!

Can I substitute ground venison for ground beef?

Here’s why I don’t recommend directly subbing venison for ground beef: you’re wanting it to taste like beef! If you use a recipe you’re familiar with and sub venison, you will notice a difference. Venison and beef aren’t the same, deer are different animals than cows. Som folks are OK with this, but when someone tells me they don’t like deer meat, it’s probably because they’re using dated or beef specific recipes.

What should I mix with ground venison? Adding fat:

People always ask me – “Allie, do you cut your deer meat with fat or anything else?”. My answer: yes! I usually cut my deer meat with about 10% beef or pork fat. It really depends on your animal. If you have a particularly plump deer you’re processing, use all deer and see what you think. But I’m not ashamed to admit that I do use other animal fats in my meat.

FAQs

What is the best to mix with ground venison? ›

Beef fat works well with ground venison, and makes the flavor closer to ground beef. Pork fat is lower in saturated fat, has less flavor and will allow the venison flavor to shine.

How should ground venison be cooked? ›

Cook to a minimum of 160 degrees F. When you grind meat, you spread any bacteria present throughout the entire batch.

How to make ground venison taste better? ›

Depending on what you're planning to cook, you may want to add fat to your ground venison. This added fat can be bacon, pork shoulder, pork belly, beef tallow, etc. It's purely personal preference. I always add about 15-20 percent fat if I'm making hamburger or kebabs, which makes the meat juicier and more flavorful.

Is ground venison healthier than beef? ›

Given that deer are leaner than cows, venison is generally healthier to eat than beef. An average cut of venison, in fact, has around half the calories and a sixth the saturated fats of a similarly sized cut of beef. It also has more proteins, vitamins and minerals than beef.

How is venison best cooked? ›

Naturally tender cuts like loins and tenderloin take well to high heat grilling, pan searing, or stuffing and trussing and should be served rare to medium rare. Here's my recipe for how to cook Chili Cocoa Crusted Venison Loin. Tougher muscles from the shoulder, shank or neck should be braised or stewed slow and low.

Why is my ground venison tough? ›

"Freshly butchered venison — especially when it is in rigor mortis — will be super tough," Cihelka said. When rigor mortis sets in, the animal stiffens. Hanging the animal prevents the muscles along the spine from shortening. This is why backstraps and tenderloin are tender.

Do you rinse deer meat before cooking? ›

Never wash raw meat before cooking.

What can ruin deer meat? ›

Venison will spoil if it hangs without refrigeration in warm weather. Let the registration station know if you wish to donate your harvest to the “charitable venison program.” Take care of your harvest as soon as possible, especially during warm weather.

How much money is a deer worth in meat? ›

The better quality steaks fetch $15 per pound or higher. So a smaller deer would be worth $525 in meat (relative to your local farmer's market meat prices). A bigger deer could be worth $1000!

What is the difference between venison and deer? ›

In current usage, the term venison is used to describe the meat of a deer or antelope. Venison comes from animals such as our native whitetail deer, reindeer, moose, elk, and several non-native animals such as red deer, axis deer, fallow deer, sika deer, blackbuck antelope, and nilgai antelope.

What is the best meat to add to ground venison? ›

Sometimes I combine ground venison and ground beef 50-50 to make a better mix for any recipe that calls for ground meat. If you do this, you can buy the cheaper ground beef that is a 75-25 mix of lean to fat, and when you add the leaner ground venison, you still get a pretty lean mix.

How to get the gamey taste out of ground venison? ›

The distinct game flavor of either birds or animals will be milder after soaking the meat overnight in the refrigerator in either a salt or vinegar solution.

What fat to mix with venison? ›

Pork fat trimmings is one of the cheapest and purest ways to add fat to venison, if you can find it. Most pork at the grocery store is usually well-trimmed, but if you find an extra fatty shoulder, trim off that fat, freeze it and save it for your venison.

What is the best pairing for venison? ›

Venison: Red wines with earthy or smoky flavors big enough for the meat's taste and richness (Mourvèdre, Syrah, Pinot Noir) and strong beer (Porter, Belgian Strong Ale, Double Stout). (Elk pairs similarly.)

What is the best ground meat mixture? ›

80/20 Ground Chuck Is Best for Burgers

The best ground beef to buy for burgers is 80/20 ground chuck – 80% lean meat and 20% fat. Ground chuck is ground from the shoulder and has that ideal lean-to-fat ratio of 80/20 (i.e. not too lean) for a super flavorful, juicy burger.

Is it better to mix venison with beef or pork? ›

Wondering what to mix with ground venison? Beef and pork are your best bets. Ground venison, or deer meat, is gamey-tasting and has very little fat. Because venison is so lean, you can improve its taste and texture by mixing it with pork sausage or beef for some added fat.

Can ground venison be eaten rare? ›

The CDC also urges hunters to cook their venison more thoroughly. They recommend cooking steaks and other whole cuts to at least 145 degrees at the center and letting it rest three minutes before carving and eating to ensure the heat kills all parasites. Ground venison should be cooked to at least 160 degrees.
